Pursuit of excellence is a never-ending rabbit hole, leading to the best green coffee we can source, controlling the roasting process to the degree and the second, the finest ingredients for our cafe, and the the highest skills we can obtain. Reaching perfection is beyond our capabilities, but the fun part is the pursuit.
We take choosing our coffee offerings seriously. We research the farm, the elevation, and the varietals. Once chosen we roast the coffee and pull samples from a light roast to a dark roast at even intervals. These samples are cupped and the quality of the coffee and the appropriate roast level is determined. That roast level is saved as a roast profile and each roast of that coffee is tracked to the degree and the moment it is optimal.
